So here's a little bit of my background. I'm a mom of two boys that are 10 and 2 and I work FT as some sort of number cruncher (way to boring to go into details). My commute is about 45 minutes one way. So life is always hectic and on the go. Which makes the GF thing a TAD harder. But slowly (and I mean snail slow) am adjusting.
I have to admit I usually make some sort of dessert once a week with my boys. It's been a long standing tradition. We make dessert on Survivor night. (still my guilty pleasure of a reality show). This past week, I needed something quick and easy and GF. I found an easy Peanutbutter cookie recipe. When I read it, I thought, oh this will taste nothing like PB cookies. But none the less decided to try it.

The recipe is as follows:
1 C of peanutbutter
1 C of sugar
1 egg -- beaten
1/2 tsp of baking soda.
Mix, roll into balls, do that fork criss-cross thing. Bake at 350 degrees for 10-15 minutes.

I was very skeptical at first. There is NO FLOUR in this recipe at ALL. NO way is this going to taste like any type of cookie. BOY was I wrong. It taste just like a PB cookie. We only had about 10 cookies, cause my little one and myself ended up eating half the dough (like you should when baking cookies). But they were actually GOOD. I was SURPRISED! Because there are plenty of cookies that I have tried that are pre-made and GF and were HORRID. Here's a quick story of one of those cookies.
A co-worker and I ran to an organic store over lunch. She was buying all these YUMMY gluten filled cookies. I was desperately looking for a GF one. But there were none, she found a different brand and it was GF. YEE-HAW. Went back to work and thought I would try this cookie. No way was I waiting. It was a chocolate crunch cookie. I opened it up and it smelled like a brownie. The chocolate smell just filled my office. Breathing in deep, take in the smell. Exhale, breath it in again. It smelled delicious. I couldn't wait to dig in. It was going to be DELICIOUS, I knew it. Took a big bite (larger than normal), awaiting the cookie to melt in my mouth and....... BLAH.. EWWW... Cough, choke, GAG. ICK. Why won't this cookie go down. Where is my water. OMG.. Ick.. There's an after taste. (Those were a few of my reactions) This was the worse tasting cookie ever. I thought, ok, maybe it was just me, made some co-workers try it. I was correct in labeling it the worse cookie EVER. They also had the same reaction. Which was quite amusing to watch. So glad they play into my games!
Here is that horrid cookie. Try it if you dare, but those who don't enjoy that soft yummy sweet cookie may enjoy this...... wow, I can't even think of a word horrid enough to describe the taste of this cookie.
BEWARE: NOT FOR COOKIE FANS!
